*Sockeye salmon Dishes

The original dishes of Lake Chuzenji are based on the Sockeye salmon. River fish is not as popular as ocean fish, but Sockeye salmon is exceptional. It belongs to the same kinship of salmon, and has a similar taste and color. It might be grilled with salt or butter. Also, bone becomes edible and you can eat from the head if it were grilled well. You also should try raw trout. It is a rarity. The best season to eat Sockeye salmon is from July to August. Fish catch is becoming less and more precious. Also, you may try rainbow trout and pond smelt.
